Pasta Sauce Raphael

Nods to The New Basics:

1 jar marinated artichoke hearts
1/2 onion, finely chopped
1 garlic clove, minced
1 28-oz can crushed tomatoes
1 t dried or 1 T fresh oregano
1 t dried or 1 T fresh basil

Drain artichoke hearts, reserving the marinade.  Pour that lovely marinade into a saucepan and saute the onion until soft.  Add the minced garlic and saute just until fragrant.  Add the can of crushed tomatoes and the herbs; simmer for 30 minutes.  Add the artichoke hearts and simmer for 5 more minutes.  Serve over pasta and garnish with freshly grated Parmesan (the stuff in the green can doesn't count).
